WIAW: Healthified Mac and Cheesy

It’s that time again… WIAW! The day of the week where we all come together to share delicious eats and meet new bloggers with similar interests. Thanks Jenn @PeasandCrayons for coming up with such a wonderful idea! It’s such a fun way to learn, about other people, great foods, and ourselves.

This week I ate my usual foods for breakfast and lunch, but I also mixed it up a bit at dinner. This is not normal for me, as I pretty much always eat either plain grilled chicken or steak with just a little bit of salt and pepper, paired with egg noodles or baked potato, and green beans. That’s pretty much my diet at least 5 days a week. Mondays are usually different because I have night class so I try to make homemade pizza bagels, but this week that was a fail because apparently refrigerated tomato sauce gets moldy after a couple of months? Not cool. Sorry I don’t use tomato sauce all the time and I only eat it once a week. So I had to go to plan B. Leftover plain pasta, garlic toast, green beans. Boring. And seriously lacking in the protein department. No wonder why I was so tired yesterday…

Last night after practice, I was really craving something cheesy and delicious. My roommate had been eating Kraft mac and cheese all week and it just sounded so… good. Maybe I was just craving some good old comfort food. I don’t know. But I also wanted it to be a little bit healthier, so I changed it up a bit.I came up with some cheesy goodness instead. I like to call it… “Healthified Mac and Cheesy” There is definitely a possibility that I’ve seen that name somewhere else before, but I’m way too lazy to go look for it.

So I took a traditional box of Annie’s whole wheat shells with white cheddar “cheese” and whipped up a batch. Instead of using the entire pouch of fake processed cheese, I decided to use just under half. I added a splash of milk, probably less than the box calls for because I don’t really like super liquidy mac and cheese, and then through a little less than 1/4 cup of fat free mozzarella cheese in there. Love my Trader Joe’s cheese! It’s the only place I can get full skim mozzarella! I was really angry when I went to Safeway and I couldn’t find it. Anyways, It came out really good. Not quite as flavorful (but that’s a result of the mozzarella which doesn’t pack as strong of a punch as cheddar)

Such a good decision. It’s always hard for me to break out of my normal habits but I’m really glad I did. It helps push that comfort zone with food a little bit more, in the hope that I’ll eventually be able to eat food without obsessing so much.

Of course I couldn’t finish without my serving of Dove Chocolate Caramel squares! Here was last night’s words of wisdom:

I’ve been getting super lame ones lately, so this was a nice surprise, especially with conferences coming up on Saturday. Gotta dream big for those big races!

Has anyone ever made cheesy bread or pizza crust with cauliflower?

My roommate and I are thinking of being brave and trying it, but I want to know how different it tastes from regular dough.

  1. Nice and it looks so good! I’m glad you did too friend! I love dark chocolate squares…I have 1-2 every night. Gotta get that uh…calcium😉

  2. I love changing up the Annie’s Mac and Cheese! i’ve also added corn, peas, chicken, and taco seasoning to the mix. SO GOOD. I’ve been wanting to make cauliflower crust pizza for a while now…it sounds a bit messy so I may save it to test on my family at home🙂

      I haven’t had Annie’s in forever but after discovering that I can make it a little healthier, it’s going to be a new staple! And I’m kind of nervous about the cauliflower bread for the taste… I don’t usually like trying new things but people swear by it so I have to give it a shot!

  4. Good for you for branching out on what you are eating. I am also a creature of habit, and I definitely tend to stick to eating the same foods over and over again, but for some reason it doesn’t bore me hahaha. I definitely need to expand my food horizons though!

    And sometimes you do just have to go big or go home and relax about food. I know from experience how scary it can be, but you are doing awesome🙂

      Thanks, girl! I mean, I do like what I’m eating. Otherwise, I wouldn’t eat it. But it definitely also has to do with obsessing over knowing exactly what I’m eating. I’ve always been a picky eater and I’ve never had a problem with it (still don’t) but being able to be flexible and not plan out exactly what I’m going to eat for dinner three days in advance is something I’m still working on.

    GREAT idea for mac and cheese. I grew up eating the box variety (Kraft though) and it was a total “babysitter meal” That and chocolate milk. Ah the good times. It’s been ages since I had boxed mac but I might test that out. The whole idea of processed cheese now grosses me out. That and the nacho cheese? Ew. Always down for a “healthified mac and cheese recipe”🙂

      I know! It tastes so good most of the time, but it is definitely a little scary with what goes into it. I’d much rather make the real stuff anyways, but it takes so much time! This is the best of both worlds, for sure.

      Haha it’s so good! It used to be like 80% of my diet (might be a slight exaggeration)- grilled cheese for lunch, mac and cheese for dinner, but now I have it every so often and it makes me love it so much more!

    I’ve tried both, Laura @ Sprint2theTables, and Lisa Lately’s pizza with cauliflower crust. I would HIGHLY recommend them! I can’t pick a favourite out the 2, I loved them both equally, but Laura’s is around twice the size of Lisa’s FYI.
    The dough is really yummy and flavourful. Defintely give it a shot:).
